ZAMPONE or ZAMPINO:
(ref nec) A specialty of Modena and northern Italy. A boneless pig's trotter stuffed with lean sinew and partially cooked, then braised, pork rind. Sold ready-to-cook or already cooked. A must-have dish on New Year's Day.

ZAZOUA:
(ref nec) Container in which coffee is prepared in the oriental style.

ZEIN:
(ref nec) Zeins are plant storage proteins insoluble in water and found in the storage organs of maize.

ZEST:
(TLFi) Membranous partition that divides the interior of the nut.
(TLFi) External, thin, colored and fragrant part of the citrus peel used to flavor culinary preparations, from which essence can be extracted; this part cut into thin strips or grated.

ZESTER:
(TLFi) To remove the zest from a citrus fruit.
This is done by rubbing the fruit on a piece of sugar, or by using a grater, a zester, or even a small knife with a very sharp blade.

(CNRTL) White membrane of citrus fruits which is found between the peel and the pulp and which is generally removed before eating the fruit.
